Preperation

  1. Heat sunflower oil in a large frying pan.
  2. Prepare sausages by browning them gently for 10 minutes, then transfer to a saucepan.
  3. Cut bacon into lengths and fry until crisp, then add to the saucepan.
  4. Slice onions and fry in the remaining fat until softened; then add crushed garlic.

Method

  1. Fry sausages for 10 minutes until browned, then move to a large saucepan.
  2. Fry bacon until crisp and combine with sausages in the pan.
  3. Fry onions for 5 minutes before adding garlic; cook until onions are golden.
  4. Add chilli powder and cook briefly before stirring in tomatoes, stock, tomato purée, Worcestershire sauce, sugar, and herbs.
  5. Pour in wine (if using) and bring to a simmer before adding the sausage mixture back in.
  6. Cover and simmer gently for 20 minutes, stirring occasionally.
  7. Add beans and cook for an additional 10 minutes until the sauce is thickened.
  8. Season with salt and pepper, and serve with rice or bread.
