175g soft light brown sugar
100g vegan vanilla yogurt alternative
1 tsp vanilla bean paste

Preperation

  1. Oil the sides of a 23cm loose-bottomed cake tin and line the base with baking paper.
  2. Whizz the vegan digestive biscuits in a food processor to fine crumbs and mix with melted coconut oil.

Method

  1. Pour softened vegan cheese into a bowl and whisk briefly.
  2. Whisk in the sugar until smooth, then combine yogurt, vanilla paste, and cornflour and whisk into the cheese mixture until smooth.
  3. Pour the mixture over the chilled biscuit base, smooth the surface with a spatula, and chill for 6 hours until set.
  4. Run a knife around the edge of the cheesecake once set, to loosen it from the tin, and top with mixed berries before serving.
